Sheetpan Honey Harissa Chicken

A sweet, easy and delicious way to feed the masses this Rosh Hashanah or all year round.


1/4 cup prepared harissa

3 tablespoons honey 

1 1/2 tablespoons minced garlic

3 tablespoons olive oil 

One whole chicken, cut into 8 pieces

2 small onions, cut into wedges 

3 zucchini, cut on diagonal into rounds

2 large Roma tomatoes, sliced into rounds

Kosher salt and freshly ground black pepper 


Preheat the oven to 375F/190C. 


Combine the honey, harissa & minced garlic in a small bowl. 


Generously (olive) oil a sheet pan and arrange the tomatoes, onions, and zucchini all over the pan. Season with salt and pepper and toss with the oil. 


Nestle the chicken on the pan and brush with the sauce. Season everything with more salt & pepper and bake until the chicken is cooked through and the vegetables are softened, 45 to 50 minutes.
